Apple and Carrot Cake Pancakes

Traditional pancakes equate to roughly 545 gCO2e per serving. However, our Apple and Carrot Cake Pancakes only emit 48g gCO2e per serving! They are not only better for your health but, better for the planet.

Recipe By Nicole Lambrecht

INGREDIENTS 

• 1/2 red apple grated (70g)

• 1 small carrot grated(60 g)

• 1 ripe banana (60g)

• 4 eggs or 2 flax eggs

• 2 dl oats (85 g)

• ground spices: 1 1/2 tsp cinnamon, 1tsp cardamom & 1/2 tsp ginger

• 2 tbsp oat milk•

Favourite toppings: seasonal fruits, pumpkinseeds & date syrup.

METHOD

Step 1

Grate the carrots and the apples into fine slices.

Step 2

Add the Carrots, Apple, oats, banana, eggs, ground spices and oat milk to a blender and blend until you have a smooth, creamy consistency.

Step 3

Preheat the pan and place a spoonful of olive oil in the pan.

Step 4

When the pan is hot add the pancake mixture using a ladle. Cook the pancakes on a low heat and flip every 3-5 minutes.

Step 5

Plate the pancakes up, add your favourite seasonal fruits and drizzle some delicious date syrup to top them off!
